So you know how I had that big tub of Blueberries? Well I also had to use them for this yummy treat!! My husband absolutely LOVES this!! It's now a regular weekend breakfast for him. But being the nice wife I am (cough cough) I made it for him to have for breakfast for a couple mornings before work! (now I have the upper hand hahaha)
So I had found the original recipe on Pinterest it was for a blackberry one but we love our blueberries so I switched it! You can find the original recipe Here
But I'll also be nice & break it down here with tutorial of how I make it
So what you need is:
For filling:
1-can Pillsbury crescent rolls (spend the extra cents & do Pillsbury seriously I've tried diff store brands but for this it comes out best with Pillsbury)
1 8oz-pack cream cheese (softened)
3-Tbsp flour
1-tsp vanilla
1/2-cup sugar
1-Cup blueberries
For Icing:
1/2-cup powdered sugar
1/8-tsp vanilla
2-Tbsp heavy cream (or milk)
*Preheat oven to 375
*Roll out crescent roll dough & spread on baking sheet make sure to pinch all the dough together where you would normally separate to make crescent rolls
Beat cream cheese & sugar add vanilla & then flour spread on top of crescent rolls & top with blueberries
Next comes the fun part making it pretty: Ok so what you need to do is overlap the sides & pinch it together if any of the dough starts to separate just pinch it closed
Now that it's oven ready pop it in bake for 15-20 minutes till its nice & golden then take it out let it cool & drizzle the icing over & TADA!!! A super yummy tasty Danish or Pastry whichever you call it!

Easy Slow Cooker Pulled Pork
So I actually make pulled pork quite often I usually use a bottle of our favorite BBQ sauce Sweet Baby Ray's & then add a small can of shredded pineapple with the juice to it. Super yummy!!
Sometimes I forget pineapple & just use BBQ sauce & a little apple juice!!
Well I got bored of that recipe & was looking for another I had found this Root Beer Pulled Pork on Pinterest of course & it's funny shortly after I found that one of my girlfriends had recommended that to another friend so I figured it must be good! So I decided to give it a whorl & it was so YUMMMY!!! Here is the original recipe I found on Pinterest Root Beer Pulled Pork
We don't really drink soda so I didn't want to get a pack of cans to just use one so I just got a 2lt & I actually just about filled my crock pot with the soda it about covered the small pork loin maybe 3-4lbs.
I forgot to put it in during the morning so I ended cooking mine for 4 hours on high! So easy just cook it in the soda then pull the pork out, dump the soda, shred the pork & put back in crock pot turn to WARM & smother in BBQ sauce. Serve when ready!!
My kids ate their whole sandwiches tonight I think this may top my other recipe for awhile :)
I actually got another meal out of this we made Pork tacos 2 nights later! I was a little skeptical because if it's not "normal" to me I tend to stray away my husband really wanted to try them so we loaded some warmed tortilla shells with the meat some lettuce, cheese (I also used shredded carrot) & topped with salsa & it was delicious!!!
I love getting 2 meals out of something & it's even better when it's not exactly the same thing.

Blueberry Streusel Cake
So I made this the other day & it was AMAZING!!! My kids were chowing it down were some big blueberry lovers here!! I usually buy the small packs but it makes no sense because we are always needing more so a couple days ago day we got one of those huge packs. The kids have been eating them for breakfast or lunch.
I noticed a couple getting yucky & I figured ok time to use these blueberries before they go bad I decided I wanted to make a cake because I like cake & it's so good with coffee. My best friend had made a blueberry streusel bread not too long ago so it's what gave me the idea
So here's what I did:
For the cake:
2-cups flour
1-cup white sugar
1-egg
4-Tbs butter room temperature
2- tsp baking powder
1/2-cup milk
1/2-tsp salt
1-tsp vanilla
2-cups blueberries
For topping:
1/2-cup brown sugar
1/3-cup flour
4-Tbsp butter
2-tsp cinnamon
*Pre heat oven to 375
*Butter a 9x13in pan
*Combine all the topping ingredients to make a crumb like texture set aside
*Combine flour, baking powder, salt in one bowl
*In separate bowl cream sugar & butter together, add egg & vanilla
*Mix flour mixture into sugar mixture slowly & add milk gradually
*Stir in blueberries & spread into pan, add topping mixture & Bake 30-35 minutes
Ready for the oven
Ready to eat!!!

Make your own Cream Of... Soup
Ok so we all know that ton's of recipes call for cream of something soups right? Well I don't know about you but Cream of Chicken soup freaks me the hell out! It's yellow & the chunks of bright pink chicken EWWW!
Plus they really are not healthy so much sodium & preservatives UM no thanks!! Now I am not health nut by any means! I love pizza or fried chicken! But I do try to make better choices a lot of times.
So I had seen on Pinterest others have made their own cream of something soups & honestly it is so freaking easy!! Really TRY IT!
So the one I use the most is cream of mushroom here is what I do:
In a sauce pan-
Melt 2 Tbsp butter
add chopped mushrooms (as much as you'd like)
Whisk in 2 Tbsp flour (let it cook for a min or 2)
Pour in 1 cup of milk slowly (you don't want the cold milk to make the flour all lumpy)
Cook for eh 10 mins (till it's on the thicker side)
You can add salt & pepper to taste ( I usually only add a little of both unless I'm mixing it with something else that has salt in it)
This is my Cream of Mushroom, seriously my food tastes way better using this :
For cream of chicken:
Melt 2 Tbsp butter
Whisk in 2 Tbsp flour
Pour in 1/2 cup chicken stock & 1/2 cup Milk
Cook till it thickens add salt & pepper to taste
For cream of celery:
Melt 2 Tbsp butter
Add chopped celery cook for couple mins to soften
Whisk in 2 Tbsp flour
Pour in 1/2 cup vegtable stock & 1/2 cup milk
Cook till it thickens add salt & pepper to taste

Coconut Breakfast Cake
Well I'm not really sure if this is more for breakfast or dessert! But I made it for Breakfast the other morning & it was so yummy!!! I found the recipe on Pinterest of course it's a Martha Stewart recipe which you can get the original one HERE.
It was super moist & delicious it calls for coconut inside the cake but I was kind of spacey yesterday & doing a million things at once & of course I forgot to mix the coconut in Ooops!
Honestly though it was so good it didn't need the coconut inside! So I just toasted coconut for the top!
my husband & kids enjoyed it. If your not a big coconut lover then I say try it my way! If you really enjoy it you may want to follow the original!
So here is what you need:
a bread pan
1 & 1/2 -sticks of butter unsalted (if you use salted then reduce amount of salt below)
2-cups flour & a little for inside the pan
1 & 1/2- tsp baking powder
1/2 -tsp salt
1-cup white sugar
1-tsp vanilla
3-eggs
1-cup buttermilk
For frosting:
1-cup powdered sugar
2-Tablespoons buttermilk
1/2 cup sweetened coconut
*Preheat oven to 350 Butter the pan & then sprinkle some flour in & shake it around
*Mix flour, baking powder, salt in a bowl
* In another bowl use a hand mixer cream butter & sugar together add eggs one at a time, then add vanilla
* slowly add flour mixture to butter mixture about 1/2 cup at a time & alternate adding the buttermilk
* Once it is all mixed add to loaf pan & bake 50-60 minutes until tooth pick inserted comes out clean.
* While baking toast coconut I used a pan on top of my stove
Finished Product :)

Mini Turkey Meat loaf's
These are one of my husband's favorite meals that I make! Bonus they are healthy!!
So after my first child I was looking for way's to get back to my pre-baby weight! I was put on bed rest with him & gained a lot of weight. He was actually the child I had the hardest time losing my weight with.
So on my quest to shed the pounds I knew I needed to eat better!! Well I'm kind of a Lifetime junkie! There used to be a show on there called Cook Yourself Thin! I don't believe it's on anymore but I could be wrong!
Anyhow they had a cookbook & I had ordered it. It has some super yummy meals! These meat loaf's were so good & had so much flavor I didn't feel like I was eating healthy! I'm kinda of a pizza & wings girl!
For the meatloaf:
1 slice of whole wheat bread
1/2 cup skim milk
1 Tablespoon + 1 teaspoon Olive Oil
1 onion diced
5oz bag of baby spinach leaves
1 1/4 pounds ground turkey
2 Tablespoons grated Parmesan
1 large egg
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/8 teaspoon nutmeg
For the Glaze:
3 Tablespoons ketchup
2 teaspoons Worcestershire sauce
1 teaspoon hot sauce
*Preheat oven to 375 degrees
*Grind bread in food processor or blender until fine. Transfer to a large bowl & pour milk over the crumbs
*Heat 1 Tbsp Olive oil in a large skillet over medium add onion & cook until soft & golden. Then add spinach stir till it's wilted. Transfer to bowl with the crumbs. Add turkey, parm, egg, salt, pepper & nutmeg. Mix well
*Pack 1 cup of the mixture into a dry measuring cup then shake out on to a cookie sheet repeat until you have used all the mixture. Gently pat the little loafs down.
*Bake until cooked through about 40 mins
* Make glaze while they are cooking & brush over them during the last 10-15 minutes!
They are so yummy I think you will really enjoy them! We eat with a side salad or baked asparagus!

Mini Oatmeal Bakes
As a mom of 3 I'm always looking for quick easy breakfast's but I also want them to be healthy!!
My kids actually do like oatmeal, they like it better if I can add a little bit of chocolate to it! Anything is better with chocolate right? Even if you don't like chocolate I have other options for you!
I have made these before but forgot to blog about them! Pinterest does it again I always find ideas & then tweak them.
So here is what you need:
5 cups -of old fashioned Oatmeal
1- Banana (mash it)
2 cups- Applesauce
2 3/4 cups- Milk
1 Tbsp.- Cinnamon
1 tsp- Salt
1/2 cup- Honey
2- Eggs
1 tsp- Vanilla
3 tsp- Baking Powder
* Chocolate chips- or you could do PB chips, raisins, or any fruit! (I've done apple chopped up & sprinkled a little more cinnamon on top those were yummy) *
Preheat Oven to 350
Mix all Dry ingredients in one bowl & the Wet in another bowl. Then mix the Dry ingredients into the Wet ones ** this will be pretty runny but it's fine!!!
Fill a muffin pan with muffin cups & spoon batter into each one then sprinkle with whatever topping you choose! You could also mix into batter if you only want to make one kind. We like variety! This recipe made 24 for us!!
Bake at 350 for 30 minutes or until a inserted toothpick comes out clean!
Let cool & you can freeze 1/2 or all in freezer bags & then pull out as needed warm for about 30 seconds to 1 minute in microwave. Easy, Healthy & Yummy!!!
These are chocolate chip & PB chip ones

Strawberry Bread
As promised from yesterday here is the Strawberry Bread:

So I played around on pinterest looking for a recipe & I found a few & then decided to do what I wanted.
I do that a lot! So here is how I made my bread:
3- cups flour
1-cup sugar
3- Eggs beaten
1 Tbsp- Cinnamon
1 tsp- Salt
1 Tsp- Baking soda
1 1/4 cup apple sauce
*Fresh strawberries (you could use frozen & thaw) But I think fresh is better :)
Not really sure how many I used because we had went Strawberry picking I'd say probably about a pack & 1/2 from the store & slice them
Mix all dry ingredients & then add apple sauce & eggs & then fold in strawberries
*You could add nuts or chocolate chips
I have friends with allergies so I wanted to be careful with what I put in mine.
Bake at 350 for 40 minutes to 1 hr you want a toothpick to come out clean.
I used 3 smaller loaf pans you could do 2 9in pans make sure you butter them or at least spray with Pam
This was super yummy & a big hit!! It is very moist!! My kids ate it again this morning for breakfast!

Homemade Bread In The Crock pot!!!
Ok so another friend of mine inspired me to make some homemade bread she found out a lot of store breads have some not so good ingredients in it. Which inspired her to make her own. She baked hers & I plan to still try that. But I was being lazy & wanted a easier way.
I played around on pinterest looking at different recipe's & then kind of took it all in & this is what I did:
1-packet active dry yeast
1 teaspoon sugar
1/4 cup warm water
1 egg
1/4 cup vegetable oil
1 cup lukewarm water
1 teaspoon salt
1/4 cup sugar
3 1/2 Bread flour
This is the flour & yeast I used
*Do Not pre-heat your crock pot/ slow cooker
*Spray the inside with non-stick cooking spray or use wax paper to line the bottom*
(I think next time I will try the paper my bread got a little burnt on bottom but my crock pot is also 8 yrs old so not sure lol)
Ok Now:
*Mix: yeast, 1tsp sugar & 1/4 cup warm water set aside & let sit 10 mins it will get foamy
Next:
*Combine: egg, veg oil, 1 cup warm water, salt, sugar & yeast mixture after it's set the 10 mins beat with a mixer for about 10 mins
*Add 2 cups of flour beat on low until its a gummy like texture
*Now use YOUR HAND * add the rest of flour a little at a time
*Knead it for about 4 mins till it's smooth. It will be sticky DO NOT add more flour! Form into a ball & place in slow cooker/crock pot
*Cook on high 2-3 hours check after 1 1/2 mine was a little over done by 2
*The top should feel firm when it's done
*Make sure to let it cool completely before you cut it
My whole family loved it!!!
